Here’s where ‘Jack’ gets technical! Malolactic fermentation starts after racking off gross lees. With secondary fermentation complete each parcel was centrifuged into premium French oak maturation. Each Shiraz parcel is then cold stabilised, blended, filtered and stored in stainless steel until bottling… and the ripping, top bloke you see above.
